Guilt Free Pancakes

Makes 6 to 8 pancakes

Prep time- 10 minutes

Calories per pancake- 102 cal (11.4 g carbs,4.4 g fat ,4.8 gm protein)

With the Covid 19 scenario, we all are staying put at home. While its good and healthy thing to do, being home means reaching out for snacks more frequently than we normally do. J

One way to avoid that is to have a breakfast that keep you fuller for a longer time, and that does not mean you HAVE to eat something boring. I personally love pancakes and that’s my favorite breakfast or post workout meal option. But the regular pancakes made with wheat or all-purpose flour can lead to sudden surge of sugar and leave you hungry again in a couple of hours.

So, here’s a recipe, that avoids exactly that as it is grain free, sugar free, uses just 5 ingredients and is absolutely delicious. Try it to believe it.

  • In a large mixing bowl, mash bananas until they break in very tiny pieces
  • Add vanilla essence or cinnamon powder and mash further until thoroughly combined
  • Add egg one at a time and whisk the mixture well
  • Add baking powder to the almond powder/coconut powder/oats flour /protein powder
  • Now gradually fold in the above powder/flour a tablespoon at a time, till the mixture is thick enough, but not dry.
  • In case you think the pancake, mixture is tad thicker than usual add a tablespoon or two of milk. (dairy or dairy free)
  • Heat the pan well, spray or coat with oil
  • Then spoon in the batter (I like to use an ice cream scoop here, so the pancakes are of same size)
  • Sprinkle chocolate chips if using
  • Reduce the heat and let the pancakes cook well
  • Flip, cook on the other side
  • Serve with any of your favorite toppings…like honey/berries/peanut butter or anything you like

Ingredients list :

*2 Ripe Bananas (medium size)

*2 whole eggs

*1 teaspoon baking powder

*1/3rd cup of almond powder/coconut powder/oats flour/protein powder

*1 teaspoon vanilla essence or cinnamon powder

*Chocolate chips (optional but are really great J )

*Oil for the pan

Note: The calories calculated are assuming you are using almond powder…if you are using any other ingredients it may change slightly
